This past October, I was invited to speak at Food On The Edge in Galway, Ireland. Food On The Edge is a 2-day symposium bringing together people from different parts of the food industry to discuss stories, ideas, and the future of food. Some shared their innovations around food sustainability, others talked about mental health, and some challenged all of us with calls to action.
Breakfast! Ok, now that I have your attention, I’ll share a little secret…I’ve always had a weird love/hate relationship with breakfast. So, I love breakfast food, but I was never a huge fan of eating in the morning as soon as I woke up.
