This past October, I was invited to speak at Food On The Edge in Galway, Ireland. Food On The Edge is a 2-day symposium bringing together people from different parts of the food industry to discuss stories, ideas, and the future of food. Some shared their innovations around food sustainability, others talked about mental health, and some challenged all of us with calls to action.
